Okay, so I might have co-opted the lyrics for this Halloween post, but that song is too overplayed anyway and is due for a little parody.  Weird Al, are you out there?

I live in a condo, so a real pumpkin is out this Halloween. The next best thing is pumpkin in a can.  I can’t carve it, I can’t light it, and I can’t toast its seeds, but it is way less messy and way easier to carry upstairs from my car.

I am in love with this week’s recipe because it is fast, easy, and tastes exactly like pumpkin pie, but without the calories and fat from the crust.  Eat it for breakfast or dessert, but just eat it, eat it, eat it, bah dun dun dun, just eat it, eat it, eat it. Get it?

PUMPKIN PIE OATMEAL

1 cup oats (large flake are the best)

1 cup milk/water

1/2 cup pumpkin puree (ED SMITH makes the best!)

Dash of salt

1/4 teaspoon pumpkin pie spice (optional)

maple syrup, raisins, & almonds (optional)

Mix together oats and milk/water in a small saucepan. Cook on medium high heat for 1 to 2 minutes, stirring once. Stir in pumpkin puree and pumpkin pie spice. Heat through, and serve. Top with maple syrup and almonds.
